You get home tired, the house is cold, your head is splitting...what are you going to do ?
Ok, enough of the Speed analogies.....
Here's a quick pasta recipe which can be eaten both in Winter as a hot meal or in Summer as a pasta salad type of dish.
What you need (servers 2 people)
1) Penne (half a packet)
2) 1 Lemon
3) 1/2 large broccoli
4) Chickpeas - optional
How do I cook this overly healthy dish ?
1) Chop broccoli into chunks - how big is a chunk ?? beats me. Half finger sizeish
2) Cut lemon in half
3) Drain chickpeas if using any and they are from a tin
4) Bring water to boil - make sure there's enough to cover past + broccoli.
5) Check how long pasta will take to cook - usually between 8-11min
6) Add pasta + pinch of salt. Once pasta has been in boiling water for 5min, add the broccoli
7) Once pasta is al dente or suitably mushy (please no!!), strain the contents (i.e. pasta AND broccoli)
8) Add olive oil to the pot (make sure the stove is off now....). About 2-3 tablespoons should do it.
9) Add some black pepper, not much....a pinch
10) Cut lemon in half and squeeze half into oil / pepper mixture.
11) Add chickpeas is using
12) Add half the pasta / broccoli and mix everything.
13) Add the rest of the pasta / broccoli
14) Squeeze other half lemon + add another tablespoon of oil and mix again
16) Serve..............

This whole process should take no longer than 10-15min... McDonalds my arse ;-)

p.s. the reason for adding only half the pasta first is that I find it easier to mix half at a time, rather than have a full pot and trying to mix that. It tends to to end up all over the stove & floor. You might be more dexterous than me ;-)
